BLACKENED STEAK
INGREDIENTS
- 1-1½ “thick steak (any cut will do)
- 1 tbsp olive oil
- 1 tbsp butter
- Denzel's All Purpose Meat Rub
- Cast iron fry pan or skillet
DIRECTIONS
- Coat entire steak or steaks with Denzel’s All Purpose Meat Rub. Put meat in a zip lock bag and let sit in refrigerator for as long as possible. (Overnight is best)
- Remove grates from barbecue and place cast iron fry pan directly on lava rocks or coals. Try to make the fry pan as level as possible. Pre heat on full blast till fry pan is stupid hot.
- While heating barbecue, melt butter with oil.
- Coat one side of steak with half oil/butter mixture and place in fry pan. Pour other half of oil/butter mixture on top of steak. Fry for about 2 minutes on each side.
- Remove from heat and let stand for 3 or 4 minutes. Steak should be rare - medium rare.
- If steak is not quite done, remove fry pan and replace grates. Turn one burner off, place steak on that side and cook to desired likeness.
**HINT** you can cook this indoors or out. Outdoor is better because you get a lot of smoke, alarms blaring kind of smoke. |
