MEXICAN SOUP

INGREDIENTS

  • 1 medium onion
  • 1-2 green peppers
  • 3 vegetable bouillon cubes
  • 2-3 cups sweet potato’s
  • 2 cups milk
  • Denzel’s All Purpose Meat Rub
  • ½ cold pack old cheddar cheese
  • Green chillies (optional)
  • 1 cup corn (optional)

DIRECTIONS

  1. Sautee one chopped onion until lightly browned.
  2. Add 1 or 2 chopped green peppers and sauté until just cooked (not soft).
  3. In a pot, boil 1 1/2 cups of water.
  4. Add 3 vegetable bouillon cubes (alternatively, use 1 1/2 cups of chicken stock).
  5. Add 2 or 3 cups of chopped sweet potato and boil until the sweet potato is soft.
  6. Add 2 cups of milk and puree.
  7. Mix in the sautéed onions and peppers.
  8. (Optional: Add 1 cup of frozen corn)
  9. Now for the secret ingredient: add 1 tsp of Denzel's Meat Rub powder (or more, depending on taste and heat threshold).
  10. To this, add 1/2 of a package of cold pack old cheddar cheese (in the red package that looks like a cream cheese container) and stir until melted. Some more milk, and then adjust seasonings as required.
  11. Simmer for 5 minutes
  12. For some fresh heat, add some finely chopped green chillies just before serving.
  13. Yum!
